  • 100 ml milk

Method:

  1. Open the tea bag and place the tea leaves in a saucepan.
  2. Add boiling water and the spices. Simmer for 3-5 minutes over medium heat.
  3. Strain through a fine tea strainer into a separate container; return the mixture to the pan.
  4. Add the milk and sugar. Stir over the heat for 30 seconds. If you have a wire whisk, the beverage may be aerated and cooled to a drinkable temperature by vigorous whisking.
  5. If you’re feeling brave, you can aerate and cool the chai by copying the practiced movements of the chaiwala, pouring the contents from the pot to a separate container and back again before decanting into a tea cup. Take EXTREME care not to burn yourself! This step takes practice, but imbues the chai with a light, aerated texture and cools it to a drinkable temperature.
